Hamantachen

Doris Kirschner kept a kosher kitchen and this is reflected in the collection’s robust selection of titles on Jewish and kosher cooking. Today is the first day of Hanukkah, but I’m sharing a recipe for hamantachen which is usually associated with Purim from 
Oy Vay! What’s Cooking Today?, a 1967 publication from the Nursery School PTA of the Jewish Community Center of Greater Minneapolis.

Hamantachen

Ingredients

3 Eggs
3/4 C Oil
1 C Sugar
1/4 C orange and rind
1 T Lemon Juice
4 C Flour
3 t Baking Powder
3/4 t Vanilla
3/4 t Salt

Fillings

I.
2 lbs. Pitted Prunes
1 pkg. White raisins
1/2 lb. Pitted Dates
3/4 C Jam
Grind fruit and add jam.
II.
1/2 jar Maraschino cherries
1 can coconut
3/4 C strawberry jam
Chopped nuts
Mix all ingredients together.
III.
1 lb. Pitted Prunes
1 pkg. Dried apricots
3/4 C Peach jam

Instructions

Mix all ingredients together. Add more flour if necessary for easy rolling texture. Roll out on floured board. Cut with round cookie cutter. Fill with desired filling. Fold edges over to triangle shape and seal by pinching corners together. Bake at 325 about 15 minutes or until browned.

Fillings

Grind fruit. Add jam and mix together.
